Satay Chicken


SATAY CHICKEN

Saute:
1 chopped onion
1 clove garlic, minced
1 tbsp curry powder, optional

Add 5 chicken breasts cut in strips. When chicken is white, add:
2 tbsp honey
7 tbsp soy sauce
1/2 cup crunchy peanut butter
1/2 cup water

Cook, stirring until thick, 10 minutes.

Serve on bed of basmati rice.
Top with spring onions and cashews (optional).

Feel Like Chicken Tonight

Baked Chicken Cutlets



3 cloves of garlic minced, 1 TB oil, 1/2 cup apricot preserve, 1/4 cup of BBQ sauce, 1/4 cup water, 2 TB onion soup mix..

1.  Cut the chicken into peices and cook the chicken and garlic in oil until brown.
2. combine the rest and baked uncovered at 375 degrees for 25-30 minutes

Easy Veggie Side Dishes

Sliced Portabella Mushrooms

Love this recipe!!

1/4 cup olive oil 2-3 tbsp soy sauce 1 tbsp balsamic vinegar This is good for 3-4 mushrooms. Emulsify with a whisk and grill or bake.

Tomato Cream Alfredo with Spinach Chive Linguine and Baby Spinach Salad

Tonight we tried the Spinach Chive Linguine from Trader Joe's. It was great! I made the sauce below from allrecipes.com and added some Barilla Roasted Garlic Marinara sauce to create the tomato cream sauce. The salad was baby spinach topped with avacado, tomoato, and a balsalmic vinagrette.

Chicken Nuggets, Zahatar Corn, and Mache Salad

Chicken nuggets are not just for kiddies! They are yummy tender chicken on the inside and crispy goodness on the outside. Get the ones in fun shapes for some extra smiles.

While nuggets are baking in the oven, cook the corn ( I love the sweet corn from Trader Joe's) according to package directions. Drain, return to pot. Season with sea salt, pepper, and plenty of zahatar.

The recipe for the salad is below. Red pepper goes really well with this salad too.

Crispy Hot Wings and Fries

We had a gigantic salad to start with lots of chopped veggies. While we ate salad and noshed on Creamy White Bean Dip and pita crackers, the wings and garlic fries were in the oven for 20--30 min at 375. Usually we use Sweet Baby Ray's Buffalo Wing or any favorite barbecue sauce, but tonight we tried the Meal Mart bag of already flavored wings. Bake until crispy and enjoy!

Easy Baked Salmon Teriyaki

Tonight on his way home from work, Yos picked up two giant salmon fillets from Hungarian. He slathered them with some yummy sauce (just use your favorite kind) and put 'em in the toaster oven for 30 min at 350. They came out AMAZING!
I made some mashed potatoes and then steamed some french style green beans in a skillet with a bit of olive oil and butter. I seasoned the beans and added some slivered almonds.
It was a great meal :)

Mmmm Tuna Melts

Again, I used my panini press to make these. (If you like open-faced sandwiches then use a toaster oven.) used Hunger Filler Manitowac Ovens bread and albacore tuna. One can is plenty for two people. I sprinkled some oregano and crushed red pepper flakes on the tuna and topped with a slice of mozz. For a side, we had our usual salad.

Salad, Soup, and Grilled Cheese

The menu for tonight is:
-Romaine salad with edema me and orange peppers.
-French onion soup with homemade croutons and mozzarella.
-Grilled cheese on the panini press.

For the soup I used canned Rokeach (one can for two people), but Kosher by Design Kids in the Kitchen has a great, easy recipe which I make when I have more time to mess around in the kitchen. For the sandwiches I used mozzarella on whole wheat. If you don't have a panini press, believe you me, it is totally worth it to get one! They make really great sandwiches and I've always had excellent results.

Salad Dressings

Lately, I have stopped using store-bought salad dressings. They aren't healthy, and the healthy kinds don't taste any good. So instead I usually drizzle a little bit of olive oil and balsamic or red wine vinegar right over my salad. A tablespoon of flaxseed oil is also good. (I get it from Trader Joe's.)
If I am having company or making a dressing for more than just myself I usually look online or in cookbooks for recipes I can make with ingredients I have at home. I usually cut down on both the oil and the sugar (or just use Splenda instead).

Pan Fried Tilapia with Broccoli and Cheese Couscous

Tonight's dinner was pretty decent. We bough fresh tilapia from Hungarian.
[I always think fresh fish is better than frozen; however, there are some advantages to buying a frozen bag of your favorite kind of fillets. If you buy a family size at Sam's Club or Costco, it's more economical. Plus, it defrosts very quickly, so if you decide to have fish for dinner you do not have to go out to the store. ]
I used the Tilpia Marinade recipe from Recipiezaar.com (Love that site!) and Yos made a box of Near East couscous. (Also love that stuff!)
For our veggie dish we had a big salad with romaine leaves, tomatoes, and edema me.
